Number eleven was a delicious Williams Sonoma recipe: Herb-Roasted Chicken. This was the first time I'd ever roasted a chicken and it turned out pretty good! Although I'm pretty sure I cooked the thing upside down. Ooops! Doesn't make for as pretty of a presentation, but at least it still tasted good.
I served the chicken with fluffy jasmine rice and a side salad. Then we pulled the chicken apart and had plenty for leftovers. Leftover roasted chicken can be added to just about any recipe that calls for shredded chicken (think enchiladas, quesadillas, soups, casseroles...) and I personally like to add shredded chicken to my lunch salads for a bit of extra protein.
I pretty much followed the recipe as is with the exception of the herbs. I used fresh rosemary from my garden and then used a combination of dried herbs from my spice cabinet.
Now that it's December I have one meal left to make for my 12 Meals, 12 Months 2012 project! I'm thinking about doing another cooking related goal/project for next year. Instead of new-to-me recipes, however, I'm thinking maybe something to do with one pot meals. They seem to be my favorite things to make and eat at home. We shall see...



I love roasting chickens. They are always SO GOOD! Lately I've been stuffing them with lemons, garlic cloves and onions. SO GOOD!
